Recipes

Last Christmas I got this massive Italian cooking Bible 'The Silver Spoon' as a gift from my boyfriend - he carried it all the way with him from The Netherlands to England, what a hero! Below you'll find some of the recipes I've tried from the book. I'll try to put more detail photographical tutorials up as time goes by.

Tagliatelle with cream, peas and ham (pg.331)

(Serves 4. Prep time: 15 mins, cooking time: 35  mins)

25g butter
2 tablespoons olive oil
1 onion, sliced very thinly
200g shelled peas
100ml double cream
2 slices cooked ham, diced
275g fresh tagliatelle
50g parmesan cheese (you can sub. this for any strong flavoured cheese really!)

(I adapted this recipe slightly to add the cheese into the cream while cooking it rather than afterwards as I just find it tastes better this way).

* Heat the butter and oil in a saucepan, add the onion and cook over a low heat, stirring occasionally for 5 minutes until softened. Add the peas and cook, stirring occasionally, for 20 minutes, then stir in the cream and cheese. Cook for 5 minutes, then add ham. Very important NOT to boil the cream or it will curdle! Cook the tagliatelle in a large pan of salted, boiling water until al dente, then drain and toss with the hot cream sauce.

If you want a vegetarian option of this recipe just substitute the recipe for any green vegetable like asparagus or even broccoli. Anything goes!
